This vanilla cake has been a long time thought. I wanted to surprise my husband with a homemade vanilla cake with all my love. Usually I prefer baking cake at home for all occasion or no occasion at all. Baking is my dream. Even though, it doesn't require much cooking on stove, it is always a tough job to get it done right. Earlier, I baked cake in microwave. I watched my mom could able to bake a without oven when we were kids. I was like," How is it even possible?" She simply says, "Yes. It's possible!" Then I wanted to know how. Then next time when I asked to bake a cake, She went out and got a bag of fine sand. Then over the induction stove (Well, it was not like the modern days induction stove. But it was an induction coil built on an insulator which my dad constructed.) she placed a wide wok and filled the wok with sand and once the sand is heated enough she placed the cake batter in baking pans and covered it. So the heat in the sand helps the cake to cook uniformly without making water vapours to fall inside. It take a hour or so. But it was super tasty.
After seeing her, making cake, I really want to do bake a beautiful cake someday and I am still trying. So when you want to bake a cake, instead of getting a cake mix from grocery store make your own recipe. That will give you satisfaction and great taste as well.
Tips for making the perfect Vanilla Cake recipe:
- It would be the best if all of your ingredients are in room temperature. Whenever I plan to bake cake, I put all the ingredients (Eggs, Butter, buttermilk) which I need from my refrigerator to my kitchen counter in the morning. So none of them stays cold.
- Never switch over to more butter and less oil or no oil at all. If you put more butter, then your cake will start to dense and dry out. This vanilla cake uses oil and butter to give the cake the best possible taste and while still preserving the soft, fluffy and moist texture. However, you can also use sunflower or canola oil instead of vegetable oil with no issues.
- Another thing is, cooling down the cake. Make sure the cake is completely cooled down before you apply the frosting. Otherwise, the warm cake will melt the frosting and you will end up in a huge mess.
- Storage is important. There is no point in making a wonderful cake if you forget to preserve it. There are cake caddies in store. If not take a deep airtight container, turn it upside down so that the cake stay safe. Put it in the refrigerator for longer storage.

Recipe:
- Prep time - 30 mins
- Cooking time - 20 to 40 mins (If baked all three at the same time) or 90 mins ( If baked 3 pans separately)
Ingredients:
- Salted butter - 1/2 cup, softened
- Vegetable oil - 1/2 cup
- Granulated sugar - 1 1/2 cups
- Buttermilk - 1 1/2 cups, room temperature
- Eggs - 3, large at room temperature
- All - purpose flour - 3 1/2 cups
- Vanilla Extract - 1 tbsp
- Baking powder - 4 tsp
- Salt - 1/2 tsp

Method:
- Grease three - 6 inch or 9 inch pans. If you want to bake cake of 6 inch and you don't have 3 6 inch pans use 9 inch pans and shape it later on. So you can use whatever you have. Line the butter greased bottom with parchment paper. Preheat the oven to 350 deg F.
- In a large mixing bowl, use a hand mixer to cream the butter, vegetable oil, sugar together. Use the beater in low speed first and gradually increase to medium until it light and fluffy.
- Add buttermilk, eggs and vanilla extract into the mixture and beat until combined.
- Sift flour, baking powder and salt. Fold in the dry ingredients to the wet mixture. Combine well.
- Divide the batter among 3 prepared pans or bake one by one. Bake for 25 to 30 mins.
- Insert a toothpick to the center and see if it comes out clean.
- Cool it down completely. Cut and level the cake. Meanwhile let's prepare the chocolate frosting.
Chocolate Frosting:
Frosting is always children's favorite! Especially when the frosting is of their favorite color, with no further delay the cake will be disappeared. That frosting needs to be perfect! The perfect chocolate frosting should be creamy, glazy. Also the cake needs to be completely cooled down. If not, the cake could melt the butter, chocolate and sugar and makes it flowing and messy. So, if you feel the chocolate frosting is liquid, you need to cool down the chocolate mixture slightly. You can also store the frosting in refrigerator and use it whenever you want to. The simple chocolate frosting recipe is below.

- Milk - 1/3 cup

Method:
- Melt butter in a saucepan. Add the cocoa powder and stir until the mixture is smooth and thick. Remove and place it in a medium size mixing bowl. Let it cool down slightly.
- Add milk and vanilla with the powdered sugar to the bowl in which the cocoa mixture is or you can add it in separate bowl too. But don't forget to to add in the cocoa mixture. Beat with hand mixer or whisk until the frosting is smooth and of spreading consistency.
- Apply the frosting on a completely cooled wired rack or on a plate. Wired rack cools the cake faster than plate.
- Finish it with desired piping designs.
