Coconut Cinnamon Rolls


Rolls of cinnamon and brown sugar with richness of coconut makes you the perfect breakfast. Cinnamon rolls always been my favorite. But I am really not a fan of gooey cinnamon rolls. My home feels fresh with the freshly baked anything. So, I wanted to try making cinnamon rolls at home without the gooey texture. Also, adding coconut in dessert makes it rich and more tasteful. These coconut cinnamon rolls are the best ever. They are fluffy, sweet, coconutty and tasty.

Cinnamon rolls are sweet rolls served commonly in European countries and in North America. It can be a recipe of having a get together. These rolls come in various sizes in various countries. However, here's a recipe of my coconut filled cinnamon rolls.

Recipe:
  • Prep time - 1 hr 30 mins
  • Cooking time - 20 mins
Ingredients:

- For the dough:-
  • Warm milk - 3/4 cup
  • Active yeast - 2 1/4 tsp
  • Granulated sugar - 1/4 cup
  • Egg - 1 full and 1 egg yolk
  • Unsalted butter - 1/4 cup, melted
  • All purpose flour - 3 cups
  • Salt - a pinch
- For the filing:-
  • Dark brown sugar - 2/3 cup
  • Ground cinnamon - 1 1/2 tbsp
  • Unsalted butter - 1/4 cup, softened
  • Coconut flakes - 1/2 cup, dry
  • Tutti frutti - few  ( optional)
- For cream cheese frosting ( optional):-
  • Cream cheese - 4 oz, softened
  • Butter - 3 tbsp, unsalted
  • Powdered sugar - 3/4 cup
  • Vanilla extract - 1/2 tsp
Method:
  • Combine the ingredients for the dough. 
  • Allow the combined dough to rise in an oil greased deep bowl by covering a cling sheet or a cloth for about 1 hr or more.
  • Roll the dough to the size of 9 X 14 inches.
  • Mix the ground cinnamon, coconut flakes, tutti frutti and dark brown sugar into the butter. (Note : Usually the butter is to grease the outer layer of the dough. But I like it in filling!)
  • Add the filling in and spread.
  • Roll the 9 inch side tightly all along and seal the sides.
  • Cut the roll to a 1 inch thickness and have 9 rolls.
  • Place the rolls in tray and cover it with towel for 30 mins. Meanwhile, preheat the oven to 350 deg Fahrenheit.
  • After 30 mins, remove the towel or cling sheet and bake the cinnamon rolls for 20 mins until they turn slightly brown on the edges.
  • Combine the ingredients for frosting and spread it before serving. (optional)
  • I like to sprinkle sugar before serving.
