Satay is a Southeast Asian food which is prepared by seasoned meat in a skewers and grilled. It may be of chicken, meat, fish or tofu. In this recipe, I have used chicken which is my favorite. You can try the recipe with your favorite meat. Also, the recipe smells and tastes even more fresh if fresh turmeric and galangal root is added instead of ground turmeric and ginger.

Recipe:
- Prep time - 30 mins
- Cooking time - 15 to 20 mins (depending upon the quantity)
Ingredients:
- For marination:
- Chicken - 1/2 breast, cut into thin strips
- Lemon grass - 1/2
- Garlic - 2 cloves
- Ginger - 2 inches
- Ground cumin - 3/4 tsp
- Ground coriander - 1 tsp
- Lemon juice - Extract of 1/2
- Fish sauce - 1/2 tsp
- Chili flakes - few
- Plain yogurt - 1 tsp
- Ground turmeric - 1/4 tsp
- Honey - 1 tbsp
- For Peanut Sauce:-
- Peanut butter - 1 tbsp
- Honey - 1/2 tsp
- Sweet Chili sauce - 1 tsp
- Fish Sauce - 1 tsp
- Lemon juice - extract of 1/2
- Apart from that:
- Oil - for grilling
- Bamboo skewers - for satay
Method:
- Put the bamboo skewers in water while you start preparing the marination. This is to avoid burning of the skewers and drying out the chicken while cooking in the grill.
- Blend lemon grass, garlic and ginger without adding water into a coarse mixture.
- In a mixing bowl, add the coarse mixture along with the rest of the other ingredients and marinade for 20 mins.
- While the chicken gets marinated, prepare the peanut sauce by whisking the ingredients.
- Feed the chicken onto the skewers.
- Cook the chicken in grill or on a griddle - about 10 mins, 5 mins or less each side depending upon the thickness.
- Serve hot with crushed roasted peanut topped dipping.
